Ingredients
1 ciabatta
1 bunch spinach (approx 300g)
1 red onion
1 garlic clove
8 black olives without pit
1 tbls olive oil
3 tbls Parmesan cheese (grated)
pinch of salt + pepper

Preheat oven to 200°C. Wash and rough cut the spinach. Cut the red onion, garlic and olives. Heat a pan and add olive oil. Fry onion and garlic for about 2-3 min, add in the olives and spinach. Heat for another 2 minutes and add a pinch of salt and pepper. Cut 8 thick pieces of the ciabatta. Put some of the spinach mixture on the ciabatta slice and sprinkle some Parmesan cheese on top. Bake for approx. 3 minutes in the oven. Serve immediately.
